Toasted everything bagels piled high with creamy burrata, a soft cooked egg, avocado, and a spicy-sweet hot honey drizzle—an easy, indulgent breakfast for lazy weekends or brunch with friends.


Ingredients

2 everything bagels, sliced and toasted

2 burrata balls

4 large eggs

1 tablespoon unsalted butter

1 tablespoon olive oil

½ avocado, sliced

1 cup baby arugula

1 cup cherry tomatoes, halved

½ teaspoon garlic powder

½ teaspoon cracked black pepper

¼ teaspoon sea salt

3 tablespoons honey

½ teaspoon red pepper flakes

1 teaspoon fresh lemon juice

1 teaspoon unsalted butter (for the hot honey)

Fresh basil leaves, for garnish

Everything bagel seasoning, for garnish

Extra cracked black pepper, for garnish

Red pepper flakes, optional garnish


Instructions

1. Toast the bagel halves until golden and crisp.

2. In a small saucepan over low heat, combine the honey, red pepper flakes, lemon juice, and butter. Stir 2-3 minutes until smooth, then remove from heat.

3. Heat the butter and olive oil in a nonstick skillet over medium heat.

4. Crack the eggs into the skillet and cook to your preferred doneness, seasoning with garlic powder, sea salt, and cracked black pepper.

5. Place a layer of baby arugula on each toasted bagel half.

6. Tear the burrata into pieces and divide evenly among the bagels.

7. Add the sliced avocado and cherry tomatoes.

8. Top each bagel with a freshly cooked egg.

9. Drizzle generously with the warm hot honey.

10. Garnish with basil, everything bagel seasoning, extra pepper, and red pepper flakes if desired. Serve immediately while warm.

Notes

A soft, slightly runny egg yolk mixes best with the burrata and hot honey.

Make the hot honey ahead of time—it keeps for weeks in a sealed jar at room temperature.

Swap burrata for fresh mozzarella if needed, though the texture will be a bit less creamy.
