Description

Bold, smoky Cajun Chicken Sloppy Joes made with ground chicken, the holy trinity of onion, celery, and bell pepper, and a rich tomato sauce—ready in one skillet in about 30 minutes.

Ingredients

1 to 1.5 lbs ground chicken

1 medium yellow onion, diced

1 green bell pepper, diced

2 celery stalks, diced

2-3 cloves garlic, minced

2-3 tbsp Cajun seasoning

1 can (14-15 oz) crushed tomatoes or tomato sauce

1 tbsp Worcestershire sauce

1 tsp brown sugar

1-2 tbsp oil, for cooking

6 hamburger buns, toasted

Salt and pepper, to taste

Instructions

1. Heat oil in a large skillet over medium heat. Add the onion, bell pepper, and celery and cook for 7-8 minutes until soft.

2. Stir in the garlic and cook for 1 more minute, until fragrant.

3. Push the vegetables to one side, add the ground chicken, and break it apart as it cooks until mostly opaque.

4. Sprinkle the Cajun seasoning evenly over the chicken and stir to combine.

5. Add the crushed tomatoes, Worcestershire sauce, and brown sugar. Stir well.

6. Simmer for 10-15 minutes, stirring occasionally, until the mixture thickens to your preferred consistency.

7. Season with salt and pepper to taste.

8. Toast the hamburger buns and pile the chicken mixture on top. Serve warm.

Notes

Ground turkey can be swapped in for ground chicken with no other changes.

For a creamier version, stir in a splash of heavy cream or a spoonful of mayonnaise at the end.

Always toast the buns—it keeps them from turning soggy under the saucy filling.

Leftovers keep in the fridge for 3-4 days or in the freezer for up to 3 months.
