Description
Creamy Cold Sesame Peanut Noodles tossed with crisp vegetables and a rich homemade sesame peanut sauce. A refreshing, easy meal that’s perfect for lunch, dinner, or meal prep.
Ingredients
12 oz (340 g) spaghetti, linguine, or ramen noodles
1 cup shredded carrots
1 red bell pepper, thinly sliced
3 green onions, thinly sliced
¼ cup chopped fresh cilantro
2 tbsp roasted peanuts, chopped
1 tbsp sesame seeds
⅓ cup creamy peanut butter
3 tbsp low-sodium soy sauce
2 tbsp toasted sesame oil
2 tbsp rice vinegar
1 tbsp honey
1 tbsp sriracha (optional)
2 cloves garlic, minced
1 tsp fresh ginger, grated
2–4 tbsp warm water
Instructions
1. Cook the noodles according to the package directions until al dente.
2. Drain and rinse the noodles under cold water until completely cooled, then drain well.
3. Whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, honey, sriracha, garlic, ginger, and warm water until smooth.
4. Place the cooled noodles in a large mixing bowl and add the carrots, bell pepper, and green onions.
5. Pour the sesame peanut sauce over the noodles and toss until evenly coated.
6. Refrigerate for 15 to 20 minutes to allow the flavors to meld.
7. Garnish with chopped peanuts, sesame seeds, and fresh cilantro before serving.
8. Serve chilled or at room temperature.
Notes
For extra protein, add grilled chicken, shrimp, tofu, or edamame.
Adjust the sauce consistency with additional warm water if needed.
The noodles taste even better after chilling for a few hours.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
