Juicy chicken breasts simmered in a rich creamy mushroom parmesan sauce and served over crispy herb-roasted potatoes for the ultimate cozy comfort dinner.
Ingredients
2 boneless skinless chicken breasts
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
1/2 tsp smoked paprika
Salt to taste
Black pepper to taste
2 cups mushrooms, sliced
3 cloves garlic, minced
1 tbsp butter
1 tbsp olive oil
1 cup heavy cream
1/2 cup chicken broth
1/3 cup grated parmesan cheese
1 tsp dried thyme
4 small Yukon gold potatoes, cubed
2 tbsp olive oil
1 tsp rosemary
1 tsp parsley
1/2 tsp garlic powder
Fresh parsley for garnish
Extra parmesan cheese
Cracked black pepper
Instructions
1. Preheat oven to 425°F (220°C).
2. Toss cubed potatoes with olive oil, rosemary, parsley, garlic powder, salt, and black pepper.
3. Spread potatoes on a baking tray and roast for 30–35 minutes until golden and crispy.
4. Season chicken breasts with garlic powder, Italian seasoning, smoked paprika, salt, and black pepper.
5. Heat olive oil in a skillet over medium-high heat and sear chicken for 5–6 minutes per side until fully cooked.
6. Remove chicken and set aside.
7. In the same skillet, melt butter and add mushrooms, cooking until browned and tender.
8. Stir in garlic and thyme and cook until fragrant.
9. Pour in chicken broth and heavy cream, then simmer for 3–4 minutes.
10. Add parmesan cheese and stir until the sauce becomes smooth and creamy.
11. Return chicken to the skillet and coat with mushroom sauce.
12. Serve creamy mushroom chicken over crispy herb potatoes and garnish with parsley, parmesan, and cracked black pepper.
Notes
For extra crispy potatoes, avoid overcrowding the baking tray.
Freshly grated parmesan melts smoother and gives the sauce better flavor.
Chicken thighs can be substituted for chicken breasts.
Serve with garlic bread or roasted vegetables for a complete meal.
