Description
Juicy Greek chicken marinated with lemon, garlic, and herbs, wrapped in warm pita with crisp vegetables, creamy homemade tzatziki, and crumbled feta for an authentic Mediterranean meal.
Ingredients
1½ lbs boneless skinless chicken thighs, cut into strips
3 tbsp olive oil
Juice of 1 lemon
4 cloves garlic, minced
1 tsp dried oregano
1 tsp paprika
½ tsp ground cumin
1 tsp salt
½ tsp black pepper
1 cup Greek yogurt
½ cucumber, grated and excess moisture squeezed out
2 cloves garlic, finely grated
1 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
1 tbsp chopped fresh dill
½ tsp salt
4 pita breads, warmed
1 cup shredded romaine lettuce
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
½ cucumber, sliced
½ cup crumbled feta cheese
Fresh parsley, chopped (optional)
Instructions
1. Whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper to make the marinade.
2. Add the chicken strips, coat well, and marinate for at least 30 minutes or up to 8 hours.
3. Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt to make the tzatziki sauce. Refrigerate until ready to use.
4. Heat a large skillet or grill pan over medium-high heat and cook the marinated chicken for 6 to 8 minutes until golden brown and fully cooked.
5. Warm the pita breads until soft and pliable.
6. Spread tzatziki over each pita, then add lettuce, tomatoes, cucumber, red onion, cooked chicken, feta cheese, and parsley.
7. Fold the pita around the filling and serve immediately.
Notes
Marinate the chicken longer for deeper flavor.
Squeeze excess moisture from the cucumber to keep the tzatziki thick and creamy.
Serve with Greek salad, roasted potatoes, or lemon rice for a complete Mediterranean meal.
