Ingredients
2 lbs boneless, skinless chicken breasts or thighs, cut into chunks
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon paprika
Salt and black pepper to taste
Wooden skewers (soaked if needed)
Pita bread, warmed and sliced
Cherry tomatoes
Cucumber slices
Kalamata olives
Red onion slices
Hummus (optional)
Fresh parsley for garnish
1/2 cup feta cheese
1/2 cup Greek yogurt
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
1 clove garlic
Salt and black pepper to taste
Instructions
1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 1 hour.
2. Thread the marinated chicken onto skewers, spacing pieces evenly.
3. Grill over medium-high heat for 10–12 minutes, turning occasionally until cooked through and slightly charred.
4. Blend feta, Greek yogurt, olive oil, lemon juice, zest, garlic, salt, and pepper until smooth and creamy.
5. Arrange grilled chicken skewers on a large serving board.
6. Add pita bread, cherry tomatoes, cucumber slices, olives, and red onion around the chicken.
7. Place the lemon feta sauce in the center and add hummus if desired.
8. Garnish with fresh parsley and serve immediately.
Notes
Marinate the chicken longer for deeper flavor—overnight is ideal.
Use a grill pan or oven if an outdoor grill is not available.
Adjust the lemon in the sauce to control tanginess.
