Ingredients
2 lbs boneless, skinless chicken thighs or breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon lime juice (freshly squeezed)
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
Salt and black pepper to taste

1 cup salsa verde
6 to 8 slices pepper jack cheese

Instructions
1. In a large bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, chili powder, salt, and pepper. Mix until fully blended.
2. Add the chicken and toss to coat every piece thoroughly. Cover and refrigerate for at least 1 hour — 2 hours gives noticeably deeper flavor.
3. Preheat your grill or grill pan over medium-high heat until properly hot.
4. Grill the chicken for 5 to 7 minutes per side, turning once, until fully cooked through and lightly charred. Internal temperature should reach 165°F (74°C).
5. While the chicken is still hot on the grill, spoon salsa verde generously over each piece.
6. Lay 2 slices of pepper jack cheese over each piece. Cover with a lid or foil for 1 to 2 minutes until the cheese is fully melted and bubbling.
7. Remove from the grill, garnish with fresh cilantro, and serve immediately with lime wedges and your choice of sides.
