Description

Tender honey glazed salmon served over creamy lemon dill orzo with Parmesan and baby spinach. This easy Mediterranean-inspired dinner is bright, buttery, fresh, and perfect for weeknights or entertaining guests.


Ingredients

For the Salmon

4 salmon fillets (about 6 oz / 170 g each)

2 tbsp olive oil

2 tbsp honey

1 tbsp Dijon mustard

2 tbsp fresh lemon juice

3 cloves garlic, minced

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

For the Lemon Dill Orzo

12 oz (340 g) orzo pasta

2 tbsp butter

2 tbsp olive oil

3 cloves garlic, minced

Zest of 1 lemon

2 tbsp fresh lemon juice

1/4 cup chopped fresh dill

1/2 cup grated Parmesan cheese

1/2 tsp salt

1/4 tsp black pepper

1 cup baby spinach

For Garnish

Lemon slices

Fresh dill sprigs


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Whisk together olive oil, honey, Dijon mustard, lemon juice, garlic, paprika, salt, and black pepper.

3. Place salmon fillets on the prepared baking sheet and brush generously with the honey glaze.

4. Bake for 12–15 minutes, brushing with the remaining glaze halfway through, until the salmon flakes easily with a fork.

5. Meanwhile, cook the orzo according to the package directions until al dente. Reserve 1/4 cup pasta water before draining.

6. Heat butter and olive oil in a large skillet over medium heat. Add the garlic and cook for 30 seconds until fragrant.

7. Stir in the cooked orzo, lemon zest, lemon juice, dill, Parmesan cheese, salt, and black pepper. Add reserved pasta water as needed for a creamy texture.

8. Fold in the baby spinach and cook for 1–2 minutes until wilted.

9. Divide the lemon dill orzo among serving plates and top each with a honey glazed salmon fillet.

10. Garnish with lemon slices and fresh dill before serving.

Notes

Fresh lemon juice and fresh dill provide the brightest flavor.

Do not overcook the salmon to keep it moist and flaky.

Reserve some pasta water to make the orzo extra creamy.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently and add a splash of water or broth to loosen the orzo if needed.
