Description

Crispy Cajun-seasoned fries smothered in creamy homemade cheddar cheese sauce and finished with a spicy ranch drizzle. Louisiana Voodoo Fries are the ultimate comfort food for game days, parties, or whenever you’re craving bold Southern-inspired flavors.

Ingredients

2 lbs (900 g) russet potatoes, cut into fries

2 tbsp vegetable oil

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper

½ tsp Cajun seasoning

1 tsp salt

½ tsp black pepper

2 tbsp unsalted butter

2 tbsp all-purpose flour

1 cup whole milk

1½ cups shredded sharp cheddar cheese

¼ cup grated Parmesan cheese

½ tsp garlic powder

¼ tsp Cajun seasoning

¼ tsp black pepper

½ cup ranch dressing

1 tbsp hot sauce

1 tsp Cajun seasoning

1 tsp lemon juice

2 green onions, thinly sliced

2 tbsp chopped fresh parsley

Sliced jalapeños (optional)

Extra Cajun seasoning for garnish

Instructions

1. Preheat the oven to 425°F (220°C) or an air fryer to 400°F (200°C).

2. Toss the fries with vegetable oil, smoked paprika, garlic powder, onion powder, cayenne pepper, Cajun seasoning, salt, and black pepper until evenly coated.

3. Arrange the fries in a single layer and bake for 35–40 minutes, flipping halfway through, or air fry for 18–20 minutes until crispy and golden.

4. Meanwhile, melt the butter in a saucepan over medium heat, whisk in the flour, and cook for 1 minute.

5. Slowly whisk in the milk until smooth and slightly thickened, then stir in the cheddar, Parmesan, garlic powder, Cajun seasoning, and black pepper until creamy.

6. In a small bowl, whisk together the ranch dressing, hot sauce, Cajun seasoning, and lemon juice.

7. Arrange the hot fries on a serving platter, pour the warm cheese sauce over the fries, drizzle with the spicy ranch sauce, garnish with green onions, parsley, jalapeños if desired, and an extra sprinkle of Cajun seasoning. Serve immediately.

Notes

For extra crispy fries, soak the cut potatoes in cold water for 30 minutes and dry them thoroughly before seasoning.

Freshly shredded cheese melts more smoothly than pre-shredded cheese.

Store leftover fries, cheese sauce, and ranch separately and reheat the fries in the oven or air fryer to maintain crispiness.
