Description

Juicy grilled chicken, fresh veggies, and fluffy grains topped with creamy herb feta sauce in a vibrant Mediterranean bowl.


Ingredients

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon cumin

Salt and black pepper to taste

2 pita breads, toasted and sliced

1 cup cooked rice or quinoa

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 red onion, thinly sliced

1/2 cup kalamata olives, sliced

1/2 cup feta cheese, crumbled

Fresh parsley for garnish

Herb Feta Sauce:

1/2 cup feta cheese

1/2 cup Greek yogurt

1 tablespoon olive oil

1 tablespoon lemon juice

1 clove garlic

1 tablespoon fresh dill

1 tablespoon fresh parsley

Salt and black pepper to taste


Instructions

1. Mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper in a bowl.

2. Coat chicken with marinade and let rest for at least 30 minutes.

3. Grill or pan-sear chicken over medium heat for 5–6 minutes per side until cooked through.

4. Let chicken rest, then slice into strips.

5. Blend feta, Greek yogurt, olive oil, lemon juice, garlic, dill, parsley, salt, and pepper until creamy.

6. Prepare bowl base with rice or quinoa.

7. Add sliced chicken, tomatoes, cucumber, red onion, olives, and pita.

8. Drizzle generously with herb feta sauce and top with extra feta and parsley.

Notes

For deeper flavor, marinate chicken longer (up to 2 hours).

Keep herb feta sauce thick for best texture.

You can swap rice with quinoa or cauliflower rice.

Great for meal prep if ingredients are stored separately.

Add extra lemon juice for a brighter finish.
