Description

Tender roasted butternut squash tossed with orzo pasta, creamy feta, toasted pecans, dried cranberries, and a sweet tangy maple glaze. This comforting fall recipe is perfect as a vegetarian main dish or a flavorful holiday side.


Ingredients

12 oz orzo pasta

4 cups butternut squash, peeled and cut into 1-inch cubes

2 tbsp olive oil

2 tbsp pure maple syrup

1 tsp Dijon mustard

1 tsp dried thyme

1 tsp dried sage

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1/2 cup crumbled feta cheese

1/3 cup toasted pecans, roughly chopped

2 tbsp dried cranberries

2 tbsp fresh parsley, chopped

For the Maple Glaze:

2 tbsp olive oil

1 tbsp pure maple syrup

1 tbsp apple cider vinegar

1 tsp Dijon mustard

1/4 tsp salt

1/4 tsp black pepper


Instructions

1. Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.

2. In a large bowl, toss the butternut squash with olive oil, maple syrup, Dijon mustard, thyme, sage, garlic powder, salt, and black pepper until evenly coated.

3. Spread the squash in a single layer on the prepared baking sheet and roast for 25 to 30 minutes, turning halfway through, until tender and caramelized.

4. Meanwhile, cook the orzo according to the package directions until al dente. Drain and transfer to a large serving bowl.

5. In a small bowl, whisk together the olive oil, maple syrup, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth.

6. Add the roasted squash to the cooked orzo and gently toss with the maple glaze.

7. Fold in the feta cheese, toasted pecans, and dried cranberries.

8. Sprinkle with fresh parsley and serve warm or at room temperature.

Notes

Roast the squash in a single layer to achieve caramelized edges.

Toast the pecans before adding for deeper flavor and extra crunch.

Store leftovers in an airtight container in the refrigerator for up to 4 days.
