Ingredients
For Roasted Garlic
2 whole garlic heads
2 tablespoons olive oil
Pinch of salt
Pinch of black pepper
For the Burrata Board
2 balls (250g) burrata cheese
½ cup sundried tomatoes in oil, drained
1 cup cherry tomatoes, halved (optional)
¼ cup Kalamata olives
2 tablespoons capers (optional)
Fresh basil leaves (a generous handful)
For Basil Oil
1 cup fresh basil leaves
½ cup extra virgin olive oil
1 small garlic clove
1 teaspoon lemon juice
Pinch of salt
For Sourdough Crisps
1 sourdough baguette, thinly sliced
3 tablespoons olive oil
1 teaspoon garlic powder
½ teaspoon sea salt
Garnish
Flaky sea salt
Freshly cracked black pepper
Chili flakes (optional)
Extra drizzle of olive oil
Instructions
1. Preheat oven to 400°F (200°C).
2. Slice tops off garlic heads, drizzle with olive oil, season with salt and pepper, and wrap in foil.
3. Roast garlic for 35–40 minutes until soft, golden, and caramelized.
4. Let garlic cool slightly, then squeeze cloves out.
5. Arrange sourdough slices on a baking tray, brush with olive oil, and sprinkle garlic powder and sea salt.
6. Bake for 10–12 minutes until golden and crisp, then set aside.
7. Blend basil leaves, olive oil, garlic, lemon juice, and salt until smooth and vibrant green.
8. Place burrata balls on a serving board and gently tear open.
9. Squeeze roasted garlic onto the board.
10. Add sundried tomatoes, cherry tomatoes, olives, and capers around burrata.
11. Drizzle basil oil generously over everything.
12. Finish with flaky salt, black pepper, chili flakes, and extra olive oil.
13. Serve immediately with sourdough crisps.

Serve burrata at room temperature for maximum creaminess.
Make basil oil fresh for best flavor and color.
Roasted garlic can be prepared ahead and stored in the fridge.
Assemble board right before serving to maintain texture.
