Description
Juicy roasted chicken, sweet caramelized peaches, tender orzo, creamy feta, toasted almonds, and a fresh lemon herb drizzle come together in this vibrant Mediterranean-inspired dinner that’s perfect for summer or any time of year.
Ingredients
1 lb (450 g) boneless skinless chicken breast, cut into bite-sized pieces
12 oz (340 g) orzo pasta
2 ripe peaches, sliced
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1/2 cup crumbled feta cheese
2 tbsp toasted sliced almonds
For the Herb Drizzle
3 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
2 tbsp chopped fresh basil
1 tbsp chopped fresh parsley
1 clove garlic, finely minced
1/2 tsp honey
1/4 tsp salt
1/4 tsp black pepper
Instructions
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss the peach slices with 1 tablespoon olive oil and arrange them on one side of the baking sheet.
3. In a bowl, toss the chicken with the remaining olive oil, paprika, garlic powder, oregano, salt, and black pepper. Spread it on the other side of the baking sheet.
4. Roast for 18–20 minutes, flipping the chicken halfway through, until cooked through and the peaches are lightly caramelized.
5. Meanwhile, cook the orzo according to the package directions until al dente. Drain and let cool slightly.
6. Whisk together the olive oil, lemon juice, basil, parsley, garlic, honey, salt, and black pepper to make the herb drizzle.
7. Combine the cooked orzo, roasted chicken, and roasted peaches in a large serving bowl.
8. Pour the herb drizzle over the mixture and gently toss until evenly coated.
9. Sprinkle with crumbled feta cheese and toasted sliced almonds.
10. Serve warm or at room temperature.
Notes
Choose ripe but firm peaches for the best texture after roasting.
Fresh basil and parsley provide the brightest flavor in the herb drizzle.
Leftovers keep well in the refrigerator for up to 4 days.
