This Street Corn Chicken Bowl combines juicy seasoned chicken, creamy Mexican-style street corn, cilantro lime rice, fresh avocado, and vibrant toppings for an easy, flavor-packed lunch or dinner that’s perfect for busy weeknights and meal prep.


Ingredients

lbs (680 g) boneless skinless chicken breasts, cut into bite-sized pieces

2 tbsp olive oil

1 tsp chili powder

1 tsp smoked paprika

1 tsp garlic powder

½ tsp ground cumin

½ tsp salt

¼ tsp black pepper

2 cups corn kernels (fresh, frozen, or canned, drained)

2 tbsp butter

¼ cup mayonnaise

¼ cup sour cream

½ cup crumbled cotija cheese (or feta cheese)

1 tbsp fresh lime juice

1 tsp chili powder

2 tbsp chopped fresh cilantro

3 cups cooked cilantro lime rice

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup sliced red onion

Lime wedges

Extra chopped cilantro for garnish


Instructions

1. In a large bowl, toss the chicken with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper until evenly coated.

2. Heat a large skillet over medium-high heat and cook the chicken for 6–8 minutes, stirring occasionally, until golden brown and fully cooked. Transfer to a plate.

3. In the same skillet, melt the butter and cook the corn for 4–5 minutes until lightly charred.

4. Transfer the corn to a bowl and stir in the mayonnaise, sour cream, cotija cheese, lime juice, chili powder, and chopped cilantro until well combined.

5. Divide the cilantro lime rice among four serving bowls.

6. Top each bowl with the cooked chicken, creamy street corn, cherry tomatoes, diced avocado, and sliced red onion.

7. Garnish with extra cilantro and serve with fresh lime wedges for squeezing over the top.

Notes

Pat the chicken dry before seasoning for better browning.

Allow the corn to char without stirring constantly for extra smoky flavor.

Fresh lime juice provides the brightest flavor.

Feta cheese works well if cotija cheese isn’t available.

Store the chicken, rice, and street corn separately for easy meal prep.
